Herbs for the Heart - Ginseng (人参)


Like Huang Qi, Ginseng is also sweet and warm in nature. It tonifies the blood and Qi, benefits the lungs and spleen. It also quenches the thirst and calms the nerves. Its key active chemical component is panaxoside. Scientific results indicates that panaxoside retards the aging process and strengthens the immune system.

Ginseng and Black-Skinned Chicken Soup(人参大补元气汤)

Ingredients:

38g of ginseng
38g of glutinous rice
5 red dates
1 black-skinned chicken
1 cup of boiling water

Instructions:
1. Gut and dress the chicken. Place in boiling water for one minute, rinse and drain it of the water.
2. Soak glutinous rice until soft. Remove the shells of red dates.
3. Stuff ginseng and glutinous rice inside chicken. Put the chicken into a stewing pot.
4. Add boiling water and red dates. Stew for 3 hours. Season with salt and serve.

Benefits:
It tonifies the Qi, strengthens the lungs and spleen. It cures Qi-anthesia, anxiety, palpitation and cold. It can also calm nerves.

Other Cooking Practices
:
1. For those with deficiency of vital energy and extremely weak pulse: cook until the soup is concentrated and drink this soup frequently. You may also add wild Shan Shen for better results.

2. For those with Spleen and Qi-anthesia, fatigue, vomitting and diarrhoea: add Bai Zhu, Fu Ling and fried liquorice root.

3. For those with deficiency of vital energy in the lungs and kidney, chest pain and shortness of breath: add walnuts and Huang Qi

Warning:
People, with exuberant heat, and those, who don't have heart or Qi-anthesia, should not drink this soup. Don't drink tea or eat carrots while using ginseng as they tend to offset the medical properties.
